Happy New Year’s Eve EVE, my friends. ?
I seriously cannot believe that tomorrow is New Year’s Eve. Which makes the day after that an entirely NEW YEAR- say whaaaat?!? Where did the time go?…
Speaking of time, that only leaves me a few more hours to prepare for our New Year’s party. Nothin’ like waiting until the last minute! I’m probably THE best procrastinator that you ever did meet.
We are keeping it simple this year and just having a few of my best girlfriend’s, their hubby’s/significant others, and all of our kiddos over for New Years Eve. Speaking of kiddos, I just found out Mo (one of the best girlfriend’s) is having a little girl! I am so excited for her and her husband. Nothing makes me happier than my friend’s and family having baby’s. She is due next May.
I have other super duper exciting news too, but I just can’t share it…yet. I’ve been sworn to secrecy. ?
But, this delicious lemon butter sauce with garlic I hold to secrecy no more. Today, I release my secret and share it with you, friends.
This lemon butter sauce is tangy, smooth, and quite darn delicious, if I may say so. It literally takes five minutes to make and you can use it on things like: fish, meat & chicken, veggies, and pretty much whatever else your little heart desires to taste like lemon and butter. You seriously cannot go wrong with using this on anything everything.
Lemon + butter = my happy place.
And nothing like bringing in the new year with my happy place… (AKA: this lemon butter sauce served atop some snook) while eating it with my closest friends and family.
This new year brings so much happiness for my family and friends. I swear there are babies-babies everywhere (except for us- WE DONE!).
Beau and I plan to pay off all of our debt this coming new year so momma here can get a new ride. With 3 kiddos, who have friends over, a sedan just ain’t cuttin’ it anymore. We need a bigger car but don’t want the car payment (we don’t have them now). So, our main goal is to pay off all of our debt (likeaBOSS) so we can actually not feel the burn of a car payment.
Such is life. And adult-ing. Can I just give up adult-ing for 2016? Just for one year? PLLLEEEEAASSSSEEEE?

Print5 Minute Lemon Butter Sauce with Garlic

- Yield: (6-8) 1/4 cup servings
Description
Super easy 5 minute lemon butter sauce. It’s tangy, creamy, and downright delicious. Use it atop seafood, veggies, meat, etc. You can’t go wrong, baby!
Ingredients
- 2 sticks salted butter (grass-fed preferably)
- 2 lemons, juiced (about 6–8 tablespoons)
- 1 tablespoon fresh parsley (optional) or 1 tsp dried
- 1 large or 2 small garlic cloves, chopped
Instructions
- Warm butter on med-high heat.
- When melted add all other ingredients.
- Simmer on low for 5 min. Serve immediately.
Notes
I used 3 small lemons and got 7 Tablespoons lemon juice

No, we have not, but I bet it would taste great. Top it with parmesan cheese. :) Yum. If you decide to do it come back an let me know how it was!
Could you refrigerate or freeze this for use as needed?
Absolutely! Butter and herbs freeze great. It will stay good in the fridge for about 3 days. Just warm up and use as needed! HTH!
