- 1 block (5.2 oz) Boursin cheese (Garlic & Fine Herbs flavor)
- 2 cups cherry tomatoes
- 3 tablespoons olive oil
- 3–4 garlic cloves, whole or sliced
- 10 oz pasta (penne, fusilli, or your choice)
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, toss cherry tomatoes with olive oil. Nestle the Boursin cheese in the center. Add garlic and season with salt and pepper.
- Bake for 25-30 minutes until tomatoes are blistered and Boursin is melted.
- Cook pasta according to package instructions. Reserve 1 cup of pasta water.
- Mix the melted Boursin and tomatoes into a sauce. Toss with cooked pasta, adding pasta water as needed.
- Garnish with fresh basil and serve hot.
Notes
- Add some red pepper flakes for a spicy kick.
- This dish pairs beautifully with a side salad or garlic bread for a complete meal.
