Blueberry Streusel Muffins




Good 'ol blueberry muffins kick it up a notch in these blueberry streusel muffins. They are filled with sweet fruit candy (blueberries) and are topped with a homemade streusel topping. Move over old-fashioned blueberry muffins there’s a new muffin in town.

  1. Add flour, sugar, and cinnamon to small bowl. Combine with fork.
  2. Add melted butter to bowl. Stir with fork until crumbly. Set aside.

For the Blueberry Muffins

  1. Preheat oven to 400F degrees.
  2. Line muffin pan with paper or silicone liners. Set aside.
  3. Stir together flour, baking powder, and salt in large bowl (or in mixer bowl). Set aside.
  4. In another large bowl, whisk together eggs and sugar until combined. Whisk in yogurt, oil, and vanilla extract.
  5. Fold wet ingredients into dry ingredients. Mix by hand or use mixer until well combined.
  6. In small bowl, toss 11/2 cups blueberries with 1 Tablespoon flour until all berries are coated with thin layer.
  7. Spoon batter into muffin cups, about 2/3 full. Cover the batter with remaining blueberries. Cover blueberries with generous amount of streusel topping.
  8. Place in oven. Reduce heat to 375F degrees. Bake 18-20 minutes, or until toothpick comes out clean when inserted.
  9. Let cool in pan for 5 min. Remove muffins and cool on wire rack.


- can use white sugar in place of demerara
