Tips for a Healthier Broccoli and Cheese Soup

A recipe for broccoli and cheese soup can be a healthy option, but it depends on the ingredients and preparation method:

  • Use Fresh Ingredients: Fresh broccoli and good-quality cheese enhance the nutritional value and taste.
  • Opt for Low-Fat Dairy: Use low-fat milk or cheese to reduce the fat content without sacrificing flavor.
  • Incorporate Other Vegetables: Adding carrots, celery, or cauliflower can boost the nutrient content and add variety.
  • Homemade Broth: Making your own broth allows you to control the sodium content and avoid preservatives.
  • Blend for Creaminess: Blending some of the cooked broccoli into the soup can add thickness and creaminess without extra cheese or cream.

How to Make 20 Minute Broccoli and Cheese Soup

  1. Prep the Veggies: Start by chopping your broccoli into bite-sized florets. Mince the garlic and chop the onion. If you’re like me, this is a great time to sip on some wine and pretend you’re a cooking show star. 🍷
  2. Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until they’re fragrant and the onion is translucent. This is where your kitchen starts to smell amazing.
  3. Make the Base: Sprinkle the flour over the onions and garlic, stirring constantly for about a minute to cook out the raw flour taste. Gradually whisk in the vegetable broth and milk, bringing the mixture to a simmer.
  4. Add the Broccoli: Toss in the broccoli florets and let them cook for about 10 minutes, or until they’re tender. If you like your soup super smooth, you can blend it at this point, but I love the texture of the whole florets.
  5. Cheesy Goodness: Reduce the heat to low and stir in the shredded cheddar cheese until it’s fully melted and the soup is creamy. Season with salt, pepper, and a pinch of nutmeg if you’re feeling fancy.

There you have it! A pot of delicious, comforting 20 minute broccoli cheese soup. 🥳 Perfect for those hectic days or when you just need a little pick-me-up. Enjoy every spoonful and savor the warmth and goodness. Trust me, your taste buds will thank you.
