- 1 lb large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2–3 dried chiles, soaked and blended
- 1 cup tomato sauce
- 2 tablespoons chipotle peppers in adobo sauce
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 1 tablespoon lime juice
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat oil, sauté onions and garlic until translucent.
- Add blended chiles, tomato sauce, chipotle peppers, cumin, paprika, oregano, salt, and pepper. Simmer for 10 minutes.
- Add shrimp and cook until pink, about 4-5 minutes. Stir in lime juice.
- Garnish with cilantro. Serve with tortillas or rice.
Notes
- Adjust the spice level by adding more or fewer chiles.
- For extra flavor, let the sauce simmer a bit longer.
