One time, Dez and I were on our way back from a long day of fishing, kids exhausted in the backseat, and all we wanted was some of that crispy, juicy goodness. We waited in line forever, only to find out they were out of chicken sandwiches. I kid you not.

  • Chicken Breasts: 2 boneless, skinless

  2. Create the Coating: In one bowl, whisk together the egg and remaining buttermilk. In another, combine flour, cornstarch, powdered sugar, and seasonings.
  3. Coat the Chicken: Dip the marinated chicken into the egg mixture, then into the flour mixture, ensuring a thorough coating. Repeat for extra crispiness.
  4. Fry the Chicken: In a large skillet or deep fryer, heat oil to 350°F (175°C). Fry the chicken breasts for about 4-5 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
  5. Assemble the Sandwich: Lightly toast the sandwich buns in a dry skillet or toaster. Place the fried chicken on the bottom bun, top with pickle slices, and add the top bun.
