How G-O-O-D these grilled chicken kabobs are- even by themselves, but the avocado dipping sauce takes it up a few notches my friends.
I found myself pondering in the kitchen last week with ‘what in the world can I make for dinner syndrome’. I know you know what I’m talking about. You stand there looking at your meat in the freezer wondering what you can throw together on a Thursday night because you are tired from the week, right? Right. At least that’s what I do…many times in a week. ;)
Here’s What’s About to go Down in Making Cilantro Lime Grilled Chicken Kabobs with Avocado Cilantro Garlic Dipping Sauce
- Da bomb grilled chicken kabob marinade: we’re talking simple stuff folks- soy sauce, honey, olive oil, fresh garlic, lime juice (the real stuff yo), and cilantro. Lemme just tell ya that you will be licking this out of the bag (before placing the raw chicken in it, of course…I hope). ;) I recommend a marinade time of at least 2 hours and up to 8, but if you’re in a hurry 30 min should be just fine.
- Chicken Breast: The most versatile meat in the world. Seriously- you can do anything with these things. Ya feel me?
- Skewers: Of course your gonna need ya some of these. We use wooden ones (which we soak before hand) but if you have metal ones that will work just dandy too.
- Avocado Cilantro Garlic Dipping Sauce: this stuff lights up your tastes buds and leaves you begging for more. Seriously. It does. I was putting it on my ridiculously easy oven roasted corn on the cob and sopping it up with my garlic bread. It’s cool, creamy, and out. of. this. world.
I mean- just look how beautiful even the raw chicken looks. Amiright? The hints of chopped garlic and that cilantro just make an amazing combination that bursts with flavor when you eat the (cooked ;)) chicken.
So, back to my pondering in the kitchen (I’m the queen of getting sidetracked- sorry not sorry?). ;) As I stood there staring into the the abyss, I mean my freezer, I saw some chicken breast all nestled up in the meat, but I didn’t want BBQ chicken because momma is just tired of it, so I had to think what I wanted to do with this dang chicken.
I looked around the kitchen to see what I had on hand and turned it into these amazing cilantro lime grilled chicken kabobs. But it didn’t stop there…
I wanted some kind of dipping sauce. Any kind but BBQ sauce at the moment (see above). I already knew I had cilantro, garlic, lime, and sour cream, but I wanted something more. Something tasty yet would make the dipping sauce a gorgeous color… and in walks an avocado.
Okay okay- really I had Beau stop and get me an avocado from the store, so he walked in with it, but we’ll just leave it at that. ;) Ok?
But in all seriousness, if I whipped these up on a tired-some Thursday night, I know that you can too. So, what ya say?

These cilantro lime grilled chicken kabobs are a hit with any age. Soy sauce + lime + cilantro + chicken = out of this world and heaven in yo mouth. The avocado cilantro garlic dipping sauce kicks it up a notch and leaves your mouth bursting with flavor!
Ingredients
For the Grilled Chicken Kabobs
- 2 lbs chicken breast, cut into 1 inch cubes
- 1/4 cup soy sauce
- 1 Tablespoon honey
- 2 Tablespoons olive oil
- 2 medium garlic cloves, chopped
- 1/2 cup cilantro, chopped
- Juice of one lime
- 1 lime, cut into wedges for serving
- Salt and pepper, to taste
For the Avocado Cilantro Garlic Dipping Sauce
- 1 avocado
- 1/2 cup sour cream
- 1/4 cup water
- 1 cup cilantro, chopped
- 1 medium garlic clove, chopped
- 1/2 teaspoon salt
- juice from 1/2 a lime
- salt and pepper, to taste
Instructions
For the Grilled Chicken Kabobs
- Cut chicken into 1 inch cubes. Set aside.
- In a gallon storage bag add soy sauce, honey, olive oil, garlic, cilantro, and juice of one lime into bag. Seal and shake. Open and add chicken. Seal again. Shake until marinade has covered every piece of chicken.
- Refrigerate chicken in the marinade for at least 2 hours or up to 8. *
- 30 minutes prior to grilling soak wooden skewers in water.
- Remove chicken from fridge. Place chicken pieces on skewers (we used 3-5 pieces per 9 inch stick), leaving about 1 inch on both ends of skewer. Repeat until all chicken is on skewers.
- Preheat grill to medium-high heat. Place kabobs on grill. Cook 3-5 min. Flip. Cook other side 3-5 minutes, or until chicken is cooked through.
- Serve with sliced lime to drizzle over chicken.
For the Avocado Cilantro Garlic Dipping Sauce
- Add all ingredients to food processor or blender. Add salt and pepper to taste.
- Can serve immediately, but I recommend refrigerating for at least one hour so flavors can combine.
Notes
*I recommend at least a 2 hour marinade time, however if your strapped for time 30 minutes should be just fine.
If you don’t have a grill, don’t fret! You can broil these on high in the oven. We also recommend this Lodge cast iron grill pan (affiliate link) if you don’t have a grill outside.
