  • Total Time: 25 minutes
  • Yield: Serves 4

Ingredients

Scale
  • Fresh salmon fillets (about 1 pound), cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • Lemon wedges for serving
  • Fresh parsley for garnish

Instructions

  1. Prepare the Coating: Set up three bowls for the flour, beaten eggs, and panko breadcrumb mixture (with garlic powder, paprika, salt, and pepper).
  2. Coat the Salmon: Dredge each salmon piece in flour, dip in beaten eggs, and coat with panko mixture.
  3. Heat the Oil: Heat vegetable oil in a skillet to 350°F (175°C).
  4. Fry the Salmon: Fry the coated salmon bites for 2-3 minutes per side until golden and crispy. Drain on paper towels.
  5. Serve and Enjoy: Garnish with parsley and serve with lemon wedges.

Notes

  • For an extra crunch, double coat the salmon bites.
  • Serve with tartar sauce or a spicy aioli for a flavor boost.
  • These bites are also great as a salad topper or in a sandwich.
