- 2 eggs, beaten
- 1 cup panko breadcrumbs

Instructions
- Prepare the Coating: Set up three bowls for the flour, beaten eggs, and panko breadcrumb mixture (with garlic powder, paprika, salt, and pepper).
- Coat the Salmon: Dredge each salmon piece in flour, dip in beaten eggs, and coat with panko mixture.
- Heat the Oil: Heat vegetable oil in a skillet to 350°F (175°C).
- Fry the Salmon: Fry the coated salmon bites for 2-3 minutes per side until golden and crispy. Drain on paper towels.
- Serve and Enjoy: Garnish with parsley and serve with lemon wedges.
Notes
- For an extra crunch, double coat the salmon bites.
- Serve with tartar sauce or a spicy aioli for a flavor boost.
