- 2 cups gluten-free all-purpose flour
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 cup fruit preserves (your choice)
- 1/2 tsp salt
- 1–2 tbsp cold water (as needed)
Instructions
- Prepare the Dough: In a large mixing bowl, combine the gluten-free flour and salt. Add the butter and sugar, mixing until the texture resembles coarse crumbs.
- Form the Dough: Add the egg and mix until the dough comes together. If it’s too dry, add 1 tablespoon of cold water at a time until the dough holds.
- Chill the Dough: Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Shape the Pop Tarts: Roll the dough out on a floured surface to about ¼-inch thickness. Cut it into equal rectangles (about 3×4 inches).
- Add the Filling: Place a teaspoon of fruit preserves in the center of half the rectangles. Top with another rectangle and seal the edges with a fork. Make small slits on top to allow steam to escape.
- Bake: Place the Pop Tarts on a lined baking sheet and bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until golden brown.
- Cool and Enjoy: Let the Pop Tarts cool slightly before serving. Enjoy as-is or add a drizzle of icing for extra sweetness.
Notes
- Storage: Store leftover Pop Tarts in an airtight container at room temperature for up to 3 days.
- Freezing: Freeze unbaked Pop Tarts for up to 3 months. Bake straight from frozen, adding 5-7 minutes to the baking time.
Glaze Option: For a quick glaze, mix powdered sugar with a few drops of milk and vanilla extract.
