Y’all, I can’t even begin to tell ya…
How easy and delicious these Hawaiian chicken and pineapple kabobs are to make. They’re so easy that Nanette (age 4) can make them, but for some reason it’s frowned upon to let a 4 year old use a hot grill. ;) ;)
So, I did what any good parent would do and let her help me make the marinade for the chicken and coat the pineapple with brown sugar. Anything is fun for a four year old when it involves brown sugar and shaking it in a ziplock bag! Nanette loves helping me in the kitchen, so much so, that I’ve nicknamed her ‘Assistant Chef’ of So Damn Delish. I couldn’t be more proud that she is interested in and wants to cook with me. :)
Molli (my almost 13 year old) also loves to help in the kitchen. She is a great baker. I usually make the meals in the house and she whips up some kind of baked treat for us. She’s great at creating and making, but not so good at the cleaning up part. Such is life. I’ll pick my battles, man. I’ll pick my battles.
Why These Hawaiian Chicken and Pineapple Kabobs will Rock Your World
- The Marinade: as we all know this girl loves her some marinades. Marinades are usually just a quick list of ingredients that are thrown together in a ziplock bag (or dish- I just prefer the ziplock bag method for turning over in the fridge). This marinade encompasses many things that I love to flavor food with. We’re working with soy sauce (my go-to for marinades!), pineapple juice (so so yum!), brown sugar, ketchup, garlic, and ground ginger here.
- Brown Sugar: OH MY GAWSH. y’all. Brown sugar is the star here in this show when it comes to the pineapple. All you do is take 1/4 cup of brown sugar and toss it into a ziplock bag then toss the pineapple in, seal, and shake to evenly coat. Easy peasy and oh so good! It really gives the grilled pineapple a great taste that is not overly sweet at all and makes it compliment the Hawaiian chicken on a level I can’t even begin to explain. The magic happens all in the taste buds, my friends. The taste buds. I might even begin to say that these grilled pineapple with brown sugar will leave your heart and soul begging for more.

Where did the Summer go? It’s the middle of July already and we are JUST starting our back-to-school shopping. School starts here August 14th so we have a little less than a month to get school uniforms (which have to have the school logo embroidered onto them), school supplies (and the school lists are soooooo long it’s ridiculous!), backpacks, shoes, socks, undies, belts, etc etc etc…for three kiddos. Right now, I’m begging for more time.
Ain’t gonna lie though- I cannot wait for them to go back to school! Ha! Come on- you know you agree with me. ;). I’m so used to having the house quiet while I work, create recipes, cook, and photograph, but this summer my house has been filled with kiddos (which I LOVE), but can get difficult at time tending to my 3 kids plus others all while trying to work. Can you imagine if your kids went to work with you everyday in the Summer?!? Ha!
And since we’re on the topic of back to school…these kabobs take ten minutes to throw together and ten minutes to grill, so they are perfect for a quick weeknight meal! Our kids absolutely love these too. They eat them up.

Ingredients
- 3 large chicken breasts, cut into 1 inch cubes
For the Marinade
- 1/4 cup soy sauce
- 1/2 cup pineapple juice
- 1/4 cup brown sugar, packed
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
For the Pineapple
- 1 pineapple, skinned and cored, cut into 1 inch chunks
- 1/4 cup brown sugar
Instructions
Marinate the Chicken
- Combine all marinade ingredients into a gallon size ziplock bag. Seal. Shake to combine. Add cubed chicken to the bag. Seal. Toss the chicken until each piece is covered with marinade. Refrigerate for 2 hours up to overnight, turning over at least once.
Make the Pineapple
- Right before threading skewers add pineapple chunks to gallon size ziplock bag. Add brown sugar. Seal. Toss until all pineapple are coated with brown sugar.
Put Together and Grill Kabobs
- Soak wooden skewers (if using) for 30 minutes prior to grilling. Thread skewers with chicken and pineapple.
- Oil grates and heat grill to medium-high heat. Place skewers on grill. Grill for 5-8 minutes, or until chicken lifts easily from the grate. Flip over. Grill for 3-5 more minutes, or until chicken juices run clear and temp reaches 165 degrees. Do not overcook chicken.
