These Hawaiian Chicken and Pineapple Kabobs take chicken and pineapple to the next level. The Hawaiian marinade on the chicken and the brown sugar on the grilled pineapple are a surefire way to make a delicious meal in less than 10ish minutes cooking time!
3 large chicken breasts, cut into 1 inch cubes
For the Marinade
1/4 cup soy sauce
1/2 cup pineapple juice
1/4 cup brown sugar, packed
1/4 cup ketchup
2 cloves garlic, minced
1/2 teaspoon ground ginger
For the Pineapple
1 pineapple, skinned and cored, cut into 1 inch chunks
1/4 cup brown sugar
Marinate the Chicken
Combine all marinade ingredients into a gallon size ziplock bag. Seal. Shake to combine. Add cubed chicken to the bag. Seal. Toss the chicken until each piece is covered with marinade. Refrigerate for 2 hours up to overnight, turning over at least once.
Make the Pineapple
Right before threading skewers add pineapple chunks to gallon size ziplock bag. Add brown sugar. Seal. Toss until all pineapple are coated with brown sugar.
Put Together and Grill Kabobs
Soak wooden skewers (if using) for 30 minutes prior to grilling. Thread skewers with chicken and pineapple.
Oil grates and heat grill to medium-high heat. Place skewers on grill. Grill for 5-8 minutes, or until chicken lifts easily from the grate. Flip over. Grill for 3-5 more minutes, or until chicken juices run clear and temp reaches 165 degrees. Do not overcook chicken.
