  1. Heat the Base: In a medium saucepan, combine the heavy cream, whole milk, and half the sugar over medium heat. Stir until the sugar dissolves and the mixture is hot, but don’t let it boil. You want it to be just below simmering.
  2. Whisk the Yolks: In a separate bowl, whisk the egg yolks with the remaining sugar until the mixture is pale and thick. This is what gives the ice cream its rich, velvety texture.
