- 2 lbs chicken drumsticks or thighs
- 2 cups buttermilk
- 2 cups flour
- 1/4 cup cornstarch
- 1 tsp baking powder
- Salt & pepper to taste
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- Oil for frying
Instructions
- Marinate the chicken in buttermilk for at least 2 hours or overnight.
- Mix flour, cornstarch, baking powder, paprika, garlic powder, cayenne pepper, salt, and pepper in a bowl.
- Coat the marinated chicken in the flour mixture.
- Heat oil to 350°F and fry the chicken for 12-15 minutes until golden and crispy.
- Let the chicken rest on a wire rack or paper towels before serving.
Notes
- Dark meat like thighs and drumsticks works best for juicy fried chicken, but you can use breasts if you prefer.
- For a lighter, healthier version, try baking the chicken at 400°F for about 35-40 minutes instead of frying.
