Ingredients
Scale
For Mashed Potatoes:
- 2 pounds Russet or Yukon Gold potatoes (peeled and cut into chunks)
- 1/2 cup unsalted butter (softened)
- 1/2 cup heavy cream (warmed)
- 1/4 cup sour cream
- 1 teaspoon salt (plus more for boiling water)
- 1/2 teaspoon black pepper
For Gravy:
- 2 tablespoons meat drippings (or unsalted butter for a vegetarian option)
- 2 tablespoons all-purpose flour
- 2 cups chicken, beef, or vegetable stock
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon fresh thyme leaves (optional)
Instructions
For Mashed Potatoes:
- Prepare the potatoes: Place the peeled and chopped potatoes into a large pot. Cover with cold water, add a generous pinch of salt, and bring to a boil over medium-high heat.
- Cook the potatoes: Reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
- Drain and mash: Drain the potatoes thoroughly and return them to the pot. Mash them using a potato masher or ricer while they are still warm.
- Incorporate ingredients: Add the butter, warm cream, sour cream, salt, and pepper. Stir until the mixture is smooth and creamy. Adjust seasoning to taste. For a fresh twist, mix in some finely chopped scallions to create mashed potatoes and gravy with scallions.
For Gravy:
- Make a roux: In a medium saucepan, melt the meat drippings or butter over medium heat. Whisk in the flour and cook for 2-3 minutes until golden brown.
- Add stock: Gradually pour in the stock while whisking continuously to prevent lumps.
- Simmer and season: Bring the mixture to a simmer, allowing it to thicken (about 5-7 minutes). Stir in salt, pepper, and thyme, if using. Adjust seasoning to taste.
To Serve:
- Spoon the mashed potatoes onto a serving dish and create a small well in the center. Pour the warm gravy into the well. Garnish with fresh herbs like parsley or thyme if desired.
- For a hearty meal, serve chicken and gravy over mashed potatoes for an unbeatable combination of flavors.
Notes
- For an extra creamy texture, use a potato ricer instead of a masher.
- Leftover gravy can be refrigerated for up to 3 days or frozen for longer storage.
- To reheat mashed potatoes, add a splash of cream or milk and warm over low heat while stirring.
