Ingredients
Scale
- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder (I prefer Ghirardelli for its robust flavor)
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs (room temperature)
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Instructions
- Prepare the Oven: Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir well to ensure even distribution.
- Add Wet Ingredients: Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix with a hand mixer or stand mixer on medium speed for 2 minutes until smooth.
- Incorporate Boiling Water: Gradually stir in the boiling water. The batter will be thin—this is normal and ensures a moist cake.
- Pour and Bake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Cool Down: Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely before frosting.
Notes
- Use high-quality ingredients for the best flavor.
- Make sure all ingredients are at room temperature before starting.
- To create a cake similar to the iconic Matilda cake scene, use rich chocolate frosting and decorate with berries or chocolate shavings.
