Description
This one pan smoked sausage with potatoes and veggies is an easy, comforting, and healthy meal for a fast weeknight dinner.
Ingredients
- 2– 14oz packages smoked sausages, cut into 1 inch pieces
- 3 large red potatoes, quartered then cubed into 1 inch pieces
- 1 yellow squash, quartered then cubed into 1 inch pieces
- 1 zucchini, quartered then cubed into 1 inch pieces
- 1 red pepper, seeded and sliced into 1 inch pieces
- 1 orange pepper, seeded and sliced into 1 inch pieces
- 1 medium red onion, halved and sliced into 1.5 inch pieces
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper, optional
Instructions
- Preheat oven to 400 degrees.
- In small bowl mix oil, vinegar, basil, oregano, garlic powder, salt, and cayenne (is using). Set aside.
- Place half of the veggies, potatoes, and sausage onto a baking pan. Pour 1/4 cup of oil mixture (from step 1) over veggies, potatoes, and sausage. Toss to combine. Repeat with remaining veggies and oil mixture onto a second baking pan.
- Place one baking sheet on middle oven rack and second sheet on bottom rack. Cook for 25 minutes. Toss sausage and veggies and return to oven switching the pans on each rack. *
- Cook for 10-20 more minutes, or until veggies and sausage are roasted brown. Serve.
Notes
*the pan that was on the middle rack will return to oven on bottom rack and bottom pan will go to middle rack.
