For the Pumpkin Bread:
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ½ cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 cup canned pumpkin (not pumpkin pie filling)
- ¼ cup water
For the Cream Cheese Icing:
- 4 oz cream cheese, softened
- 2 tbsp unsalted butter, softened
- 1 ½ cups powdered sugar
- ½ tsp vanilla extract
- 1–2 tbsp milk (as needed for consistency)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix dry ingredients in a bowl.
- Combine wet ingredients in another bowl, then mix with dry ingredients.
- Pour into a loaf pan and bake for 60-65 minutes.
- Cool, then frost with cream cheese icing.
Notes
- Make sure your pumpkin bread is completely cooled before applying the icing to avoid it melting.
