The potatoes are seasoned in spices, herbs, and olive oil before being roasted to perfection in the air fryer. They’re so contradictory. They are soft yet crispy – that’s crispy on the outside and all that soft delicious potato-y goodness on the inside.
Can’t beat that, y’all. We make these roasted russet potatoes 2-3 times a week. The kids devour them and I can’t help it because they are so dang easy to make, and that whole 6 ingredient thing, is more booming when used with Japanese White Sauce. That’s a #winwin for a side dish in my book.

INGREDIENTS USED TO MAKE ROASTED RUSSET POTATOES IN AIR FRYER
- 5 medium russet potatoes, quartered and cut into 1 inch pieces
- Olive oil
- Seasonings: chili powder, garlic powder, salt, and Italian seasoning
STEPS TO MAKING ROASTED RUSSET POTATOES IN AIR FRYER
- Combine olive oil and seasonings in a large bowl. Add cut potatoes to bowl and toss to combine.
- Line a baking sheet with a silicone baking mat and place potatoes on the baking sheet.
- Roast for 20 minutes. Flip. Roast for another 25 minutes.
Done! So easy, simple, and delish.

These roasted russet potatoes in air fryer are tossed in olive oil with herbs and seasonings then roasted to perfection in your air fryer.
INGREDIENTS
- 5 medium russet potatoes, quartered then cut into 1-inch pieces
- 1/4 cup olive oil
- 1 Tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon Italian Seasoning
INSTRUCTIONS
- Preheat the air fryer to 425 degrees. Line a baking sheet with a silicone baking mat (or foil). Set aside.
- In a large bowl combine olive oil, chili powder, garlic powder, salt, and Italian seasonings. Stir to combine. Add cut potatoes to bowl. Toss to combine, making sure that each side of all of the potatoes are coated with the olive oil mixture. Place oiled potatoes on your prepared baking sheet.
- Roast for 20 minutes. Flip. Roast for 20-25 more minutes, or until potatoes are fork tender. Serve.
