Ingredients

- 1 lb Italian sausage
- 1 large onion
- 3 cloves garlic
- 4 cups chicken broth
- 2 cups baby spinach
- 1 can diced tomatoes
- 1 cup carrots
- 1 cup celery
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper
- 1 tbsp olive oil
Instructions
- Brown the sausage in olive oil, then set aside.
- Sauté onion, carrots, celery, and garlic.
- Return sausage to the pot, add broth and tomatoes and simmer.
- Stir in spinach and season to taste.
Notes
- Feel free to adjust the seasoning to your liking. If you prefer a spicier kick, add a pinch of red pepper flakes. And if you’ve got any extra veggies lying around, throw them in!
