STIR FRY

  • 3 Tablespoons olive oil, divided
  • 2 boneless skinless chicken breast, cubed
  • 1 bunch broccoli, chopped into small florets
  • 2 green onions, thinly sliced
  • 1 teaspoon sesame seeds

STIR FRY SAUCE

  • 3 T soy sauce
  • 1 teaspoon sesame oil
  • 2 T rice vinegar
  • 2 Tablespoons brown sugar
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground ginger 
  • 1 Tablespoon cornstarch

Instructions

  1. Combine stir-fry sauce ingredients in a small bowl. Whisk to combine. Set aside. 
  2. Heat 2 T olive oil over medium-high heat in a wok or skillet. Add chicken and season with salt and pepper. Cook until chicken is browned and cooked through- 5-8 minutes. Drain water from the chicken and set aside.
  3. Add 1 Tablespoon olive oil to a wok or skillet.  Add broccoli. Saute over medium-high heat for 4-6 minutes or until broccoli is bright green. Add chicken back to the pan. 
  4. Pour sauce over chicken and broccoli. Stir to combine. Add sesame seeds. Stir. Cook for 1-2 more minutes, or until the sauce has thickened. Sprinkle green onion on top. Serve.

Notes

  • Pre-cut Ingredients: Buy pre-chopped broccoli and chicken, or chop them ahead of time to save on prep time.
  • Use Frozen Broccoli: Frozen broccoli can be a convenient option and cooks quickly in the microwave.
  • Marinate Chicken: If time allows, marinate the chicken in advance to enhance flavor and tenderness.
