Easy Slow Cook Beef Stew in Slow Cooker

Sometimes you just need a good beef stew…

And this one fits the bill. Slow cook beef stew in slow cooker!

Locked and loaded with veggies and chuck beef roast, they are slow-cooked in a deep, dark, and rich sauce that you will want to slurp up.

That’s right up my ally.

This slow-cooker beef stew is so easy to make too (of course easier than this delicious Jamaican Oxtail Recipe Slow Cooker). There’s no searing the roast (who wants to wash another pan? Not me!) ;). You literally just dump everything into your slow cooker and go on about your business.

While you are going about your business, your slow cooker will transform all the ingredients into the best beef stew you ever will eat.

We served ours with some warm French bread for dipping in that deep, dark, rich sauce.

It was heavenly.

  • Chuck beef roast
  • Russet potatoes
  • Yellow onion
  • Carrots
  • Beef broth
  • Tomato paste
  • Seasonings: soy sauce, Worcestershire sauce, Italian seasoning, garlic powder, salt, and pepper

  1. Add beef broth, soy sauce, Worcestershire sauce, tomato paste, Italian seasoning, garlic powder, salt, and pepper to slow cooker. Whisk to combine.
  2. Add chuck beef roast, potatoes, onion, and carrots to the slow cooker. Stir to combine. Cook on high for 3-4 hours or low for 6-7 hours, or until potatoes are tender. Serve.

Easy slow-cooker beef stew is where it’s at.

This easy slow cook beef stew in slow cooker is so simple. Just add everything to the slow cooker, turn it on, and it produces a rich-tasting and deep beef stew. 

INGREDIENTS

  • 1.5–2 pound chuck beef roast, cut into 1-inch cubes
  • 4 russet potatoes, cut into large chunks 
  • 1 large yellow onion, cut into chunks
  • 1 pound carrots, cut into 1.5-inch chunks
  • 3 cups beef broth
  • 1 Tablespoon soy sauce
  • 1 Tablespoon Worcestershire sauce
  • 2 Tablespoons tomato paste
  • 1.5 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt

INSTRUCTIONS

  • Add beef broth, soy sauce, Worcestershire sauce, tomato paste, Italian seasoning, garlic powder, salt, and pepper to slow cooker. Whisk to combine. 
  • Add chuck beef roast, potatoes, onion, and carrots to the slow cooker. Stir to combine. Cook on high for 3-4 hours or low for 6-7 hours, or until potatoes are tender. Serve. 

NOTES

  • Serve with warm French bread or dinner rolls to dip into that deep, dark, rich sauce.
