I’ve been making this recipe for years and people have ranted and raved over these collard greens. Back when Beau was working a corporate job I made a huge tray of these for an office gathering and they were all eaten up and people couldn’t believe how good they were.
This recipe is so good that non-collard green eaters will become collard green eaters. It’s simply that good.
With goodness always comes a secret ingredient. Amiright? Well, these collard greens have two secret ingredients…
The ham hocks (don’t skip these- they add so much flavor) and the main secret ingredient is (drumroll please…)…
CHICKEN BROTH! Yes, I should be yelling the secret ingredient at the top of my lungs because simmering your ham hocks, onions, and collard greens in chicken broth is what makes these THE best collard greens you ever will eat, my friends.

Ingredients Used to Make The Best Collard Greens
- Collard Greens
- Ham Hocks
- Yellow Onion
- Chicken Broth
- Olive Oil
- Seasonings: seasoned salt and garlic powder
Steps to Making The Best Collard Greens EVAH!
- Prep– you gotta prep what the collards go into, baby. Start by dicing the onions and trimming and cutting the collard greens into 1 inch strips. Heat the olive oil and saute the onions, ham hocks, and spices. Add chicken broth to pot.
- Simmer– You’re gonna turn the heat to low and simmer the onions, seasonings, and ham hocks for thirty minuets! THIS IS KEY baby. It is.
- Cook– After it is done simmering you will add the collard greens to the pot and cook for 20 minutes, or until tender.

These collard greens are THE best collard greens you will ever eat! Seasoned to perfection, the greens are simmered until tender in a secret ingredient.
Ingredients
- 1 bunch collard greens, trimmed and cut into 1 inch strips
- 1–1.5 lbs ham hocks (found in your meat section)
- 1 yellow onion, diced
- 4 cups (32oz) chicken broth
- 3 Tablespoons olive oil
- 1 teaspoon seasoned salt*
- 1 teaspoon garlic powder
Instructions
- Heat olive oil in stock pot or dutch oven, over medium-high heat. Add ham hocks, onions, seasoned salt, and garlic powder. Cook until onions are translucent, about 5-7 minutes, flipping the ham hocks once.
- Add chicken broth to pot. Bring to a boil. Cover, and reduce heat to low. Simmer for 30 minutes.
- Add collard greens to pot. Turn heat to medium. Bring to a boil, cover and cook for 20-25 minutes, or until greens are tender. Serve.
