- 1 pound ground venison
- 1/2 pound ground pork or pork fat
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- 1/2 teaspoon fennel seeds (optional)
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon brown sugar
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, combine ground venison, ground pork or pork fat, and all spices. Mix thoroughly until well combined.
- Shape the mixture into patties, logs, or stuff it into casings, depending on your preference.
- Heat a skillet over medium heat and cook patties until browned on both sides and fully cooked through, about 4-5 minutes per side. If making sausage links, simmer them in water for 10 minutes before browning them in the skillet.
- Serve hot alongside eggs, toast, or in a deer sausage breakfast burrito with scrambled eggs, cheese, and salsa.
Notes
- If you want to switch things up, try adding different spices like smoked paprika or even a little maple syrup for a sweet-savory combo.
