- 1 cup lump crab meat
- 1 cup heavy cream
- 4 egg yolks
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh chives, chopped
- ¼ cup panko breadcrumbs
- Salt and pepper, to taste
Instructions
- Preheat oven to 325°F. Grease ramekins and place them in a baking dish.
- Heat heavy cream until steaming. In a bowl, whisk egg yolks, Parmesan, garlic, salt, and pepper.
- Slowly whisk in cream to temper the eggs. Fold in crab meat and chives.
- Pour the mixture into ramekins, set them in a water bath, and bake for 30-35 minutes.
- Top with panko breadcrumbs and broil until golden. Serve warm.
Notes
- Add a drizzle of truffle oil before serving for an extra touch of luxury.
- Swap out the Parmesan for Gruyère or sharp cheddar for a different flavor twist.
