Ingredients

  • 3 pounds oxtail
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • 2 teaspoons allspice
  • 2 tablespoons soy sauce
  • 1 tablespoon browning sauce
  • 1 Scotch bonnet pepper (optional)
  • 2 carrots, chopped
  • 2 cups beef broth
  • 1 can butter beans, drained
  • Salt and pepper to taste

Instructions

  1. Season and brown the oxtail.
  2. Place in a slow cooker with onion, garlic, thyme, soy sauce, browning sauce, and Scotch bonnet pepper.
  3. Add broth and carrots, then stir.
  4. Cook on low for 8 hours.
  5. Add butter beans in the last 30 minutes.
  6. Serve hot with your favorite sides.

Notes

  • If you prefer a milder dish, skip the Scotch bonnet pepper.
