- 3 pounds oxtail
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme
- 2 teaspoons allspice
- 2 tablespoons soy sauce
- 1 tablespoon browning sauce
- 1 Scotch bonnet pepper (optional)
- 2 carrots, chopped
- 2 cups beef broth
- 1 can butter beans, drained
- Salt and pepper to taste
Instructions
- Season and brown the oxtail.
- Place in a slow cooker with onion, garlic, thyme, soy sauce, browning sauce, and Scotch bonnet pepper.
- Add broth and carrots, then stir.
- Cook on low for 8 hours.
- Add butter beans in the last 30 minutes.
- Serve hot with your favorite sides.
Notes
- If you prefer a milder dish, skip the Scotch bonnet pepper.
- You can also add other vegetables like potatoes or bell peppers for a heartier meal.
