These beef tips in mushroom gravy are to-die-for! We had none left after serving this meal. And let me tell ya why…

These beef tips are actually beef stew meat. You know, the stew meat you see in the store but don’t necessarily feel like beef stew? Well, move over beef stew because there’s a new sheriff in town when it comes to stew meat. ;)

These beef tips are braised in beef broth for 30 minutes before making the gravy. O.M.G, y’all, the gravy! The gravy is where it’s at. We were fighting over who got more on their plate. Because, um…gravy. I heart any and all gravy’s but this mushroom gravy really stands out. It’s deep. And dark. And filled with mushrooms and freshly chopped garlic. It’s made from a base of beef broth- the same beef broth that the stew meat is braised in. It’s delightful. And satisfying. And compliments the braised stew meat to create the perfect comfort-food meal.

Ingredients Used to Make these Beef Tips in Mushroom Gravy

  • Beef stew meat
  • Sliced mushrooms
  • Garlic cloves
  • Beef broth
  • Olive oil
  • Corn starch or flour & water
  • Spices: salt & pepper

Simple Steps to Making Beef Tips in Mushroom Gravy

  1. Brown stew meat.
  2. Add beef broth to pan, bring to boil, turn the heat down to medium-low, and simmer the meat in the beef broth for a quick 30 minutes. Remove meat from pan and set aside.
  3. Add mushrooms and garlic to beef broth. Cook for 10 minutes. Remove from pan and set aside with meat.
  4. Add remaining beef broth to pan. Mix cornstarch (or flour) with water and put mixture into the broth, whisking constantly, and simmer for 3 minutes.
  5. Add stew meat and mushrooms back to pan and place them in the mushroom gravy. Simmer for 5 minutes. Serve!

So easy. So satisfying.

Beef Tips in Mushroom Gravy

Yield 4-6 servings

These beef tips in mushroom gravy are an all-time comfort food. Braised in beef broth and finished in a mushroom gravy, these beef tips are sure to blow your tastebuds!

Ingredients

  • 2lbs beef stew meat
  • 8 oz sliced mushrooms
  • 2 garlic cloves, chopped
  • 3 cups beef broth, divided
  • 2 Tablespoons olive oil
  • 1/4 cup cornstarch or flour
  • 1/4 cup cold water
  • Salt and pepper, to taste

Instructions

  1. In a cast iron skillet (or heavy saucepan) heat 2 Tablespoons olive oil over medium-high heat. Generously salt and pepper stew meat. Brown stew meat for 3-5 minutes on each side. 
  2. Add 2 cups beef broth to pan with meat. Bring to a boil then turn heat to medium-low, cover, and cook for 30 minutes. Remove meat from pan with slotted spoon or tongs. Set aside. 
  3. Turn heat to medium-high and bring broth to a boil. Add mushrooms and chopped garlic. Cook for 10 minutes. Remove mushrooms with a slotted spoon. Set aside (I just put the mushrooms in a bowl with the meat). 
  4. Add 1 cup broth to pan. While it comes to a boil, whisk flour (or cornstarch) with water in a cup, ensuring all clumps are whisked out. Add mixture to the broth in the pan, whisking constantly until it comes to a simmer. Turn heat down to low and simmer for 3 minutes. Stir. 
  5. Add meat and mushrooms back to the pan with the gravy. Let simmer for 5 minutes. Serve!
