Well, you probably are since it’s Thursday, huh? I know how you’re feelin’, it’s the “I’m so tired I don’t want to cook tonight” spiel.
Story of my life by Thursday. Amiright? But…wait for it! I have a little tale for you called…

I’m serious y’all, you can have a homemade dinner in no time with these AMAZE roasted green beans. Just throw some meat on the grill or roast/bake some in the oven.
We like to roast our 2-ingredient high heat whole chicken (recipe coming soon!) for an easy and quick homemade meal. See? No need to have drive-thru guilt on a Friday morning. Save it for when you can be guilty in bed, relaxing and watching tv (hey there weekends!).
Buhahahaha (that’s me laughing hysterically)– Relaxing? Bed? On weekends? Not with 3 kiddos. ;)
The 4 Must-Have Ingredients to make these Roasted Green Beans with Lemon and Garlic:
- Green Beans
- A Fresh Lemon
- Cloves of Garlic
- Olive Oil
We also use salt and pepper, but I never count those as ingredients because most people have them hangin’ around. I think I even remember always having them in college. Hey- there may have been absolutely no food in the house (except for ramen noodles-don’t judge a sistah!), but we for-sure had salt and pepper in the cabinet. ;)

Roasted Green Beans with Lemon and Garlic

These roasted green beans with lemon and garlic are super-easy to make, down right delicious, full of flavor, and have only four ingredients.
Ingredients
- 1 lb green beans, trimmed*
- 1 tablespoon (about 3 med cloves) garlic, chopped
- 1 large lemon, sliced
- 1 tablespoon olive oil
- 6-8 whole garlic cloves, unpeeled (optional)
- kosher salt & pepper, to taste
Instructions
- Preheat oven to 400 degrees.
- Add green beans, chopped garlic, olive oil, whole garlic cloves (if using), salt, and pepper to baking sheet/pan. Place lemon slices throughout pan.
- Roast for 15 min on middle rack. Remove from oven and flip/stir with spatula. Return to oven. Roast for 15-20 min more**, until green beans are roasted to your liking. Remove from oven.
- Using a spatula stir/flip green beans, lemon, and garlic to evenly distribute lemon juice that has cooked out of lemon slices. Serve immediately.
Recipe Notes
*I only trim (snap off) the end of the green bean that was attached to the vine
**All ovens and green beans will vary on roasting time after returning to oven. We like our green beans more on the "crunchy" side rather than mushy. So, we do 15 min one side and 15 min the other! I suggest to start checking them at 5 min intervals starting at 10 min after flipping and returning oven.
