Because it’s Wednesday…

and I needed a really quick meal to throw together because I had the middle-of-the-week exhaustion-you know what I’m talking about! ;). I looked around the kitchen wondering what I could throw together in about 30 min and preferable use only one pan. When mamma gets tired, dishes are the last thing she wants to do…ya feel me? ;)

In the fridge I saw some pork shoulder blade steaks and green beans. In the pantry- potatoes. I figured I’d throw all these bad boys together on one pan with some seasonings and call it a day. So, I did just that. And let me tell you it was scrumptilicious (is that even a word? Well, it is now). ;).

One Pan Chili-Rubbed Pork Chops with Green Beans, Garlic, and Potatoes

This one pan chili-rubbed pork chops meal  is ridiculously easy to throw together for those busy weeknights! Your entire meal is on one baking sheet- pork chops, green beans, garlic, and potatoes. #likeaboss

Ingredients

For the Rub

  • 1 Tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt

Cooking

  • 2lbs pork shoulder blade steaks*
  • 1 lb green beans, trimmed
  • 4 large red potatoes, quartered and sliced into 1/2 inch pieces
  • 8 cloves garlic, unpeeled 
  • 1/4 cup olive oil
  • 1/2-1 teaspoon salt, to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients for run in small bowl. 
  3. Rub the rub on both sides of pork chops. Place in line down center of baking sheet. 
  4. Add green beans, garlic, and potatoes around pork chops on baking sheet. Drizzle olive oil and salt over green beans and potatoes. Toss gently to evenly distribute salt and olive oil. Cover tightly with foil.
  5. Bake for 20 minutes. Remove foil. 
  6. Bake for 10-20 more minutes, or until meat and potatoes are done and golden brown. Serve.

Notes

  • If you can't find pork shoulder blade steaks use any form of pork chops that are thicker then 1/2 inch thick!
