Lately I’ve been having a love affair…

With sweet treats as soon as the kids go to bed. I don’t know what it is or why it is happening but I’m not gonna fight it, yo. Why? Because I get to eat yummy sweet treats like this easy cinnamon blueberry cobbler.

Would you apologize for that? I won’t. ;) I didn’t hide this one all to myself like I do some sweet treats, you know where you’re hiding in the closet or pantry eating them so you don’t have to share with the kids. Come on….I can’t be the only one that does that sometimes. ;).

I shared this one with the entire family and they gobbled it up. We topped it with some vanilla bean ice cream and served the blueberry cobbler warm.

Easy Cinnamon Blueberry Cobbler

This easy cinnamon blueberry cobbler is bursting with blueberries and cinnamon and topped with an easy cobbler batter that bakes to perfection! 

Ingredients

Berry Mixture 

  • 4 cups fresh blueberries 
  • 1/4 cup granulated white sugar
  • 1/2 teaspoon cinnamon
  • 1 Tablespoon fresh lemon juice 
  • 3 Tablespoons butter, melted

Cobbler Batter

  • 2/3 cup all-purpose flour
  • 1 stick butter, room temperature
  • 1/2 cup granulated white sugar
  • 1/4 teaspoon baking powder
  • 1 egg
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 375. 

For the Berries:

  1. In a medium bowl toss the berries, melted butter, sugar, cinnamon, and lemon juice. Set aside.

For the Cobbler

  1. In a medium bowl using an electric mixer combine the butter and sugar until fluffy. Mix in the egg and vanilla. Add flour, baking powder, salt, and cinnamon to bowl, beating until combined. 

Assemble/Bake:

  1. Transfer berry mixture to 9-10 inch pie plate. Drop the cobbler batter by spoonfuls on top of the berry mixture, covering the top as much as possible.  
  2. Bake 35-40 minutes, or until the top is golden brown and the filling is hot and bubbling. Serve!

Notes

We like to serve this warm with vanilla ice cream on top. Delish!

    Blueberries are some of my favorite fruits to work with and this looks great. I would, however, have to top it with some vanilla ice cream
